Quinoa Buddha Bowl

I'm dieting. I have successfully lost 7 pounds in the last 2 weeks and feeling great! Every summer I loose weight and tone up with all the bike rides I get in and I tan, eat rite and I'm over all healthy and happy. The winter sets in and I'm like a Black grizzly bear, I gain weight, I go pale and feel homely. I can't do it anymore, my weight was getting up there. I have been on a strict tea/smoothie light dinner diet and its working. I made this meal the other night to slim down on calories plus I heard that Quinoa was pretty darn healthy for you, so I bought a bag at Sprouts. Its actually yummy, I thought it would be gross. Nope, try it if you can. Dinner was great, biggest surprise? Caleb at it all.

Ingredients
  • 2 tablespoons olive oil
  • Salt & pepper to taste
  • 1 cup cooked quinoa (any variety)
  • 2 cups broccoli
  • 1/2" peas
  • 1/2" carrots
  • 1/4" teaspoon minced garlic 
  • half a onion
  • 1/2" spinach
Instructions

Cook the Quinoa according to package, or however you cook it. I use my Rice Steamer to cook mine and turns out perfectly every time. One way of knowing if its done is the rice gets "tails" on them at the end.

Heat the stove top up, Med. heat add tablespoons of oil. Then add in and saute the onions and carrots together. Addi n the salt and pepper and minced garlic. Once slightly soft, add in the spinach.

I boiled my peas on the stove top.

Once everything is done, simply toss it all together and enjoy!! I added a touch more salt and pepper after for more flavor. Wanted to also let it be known this bowl you can seriously add any veg's too and its amazing, specially if you have left over vegetables and not sure what to do with them.

  1. This looks and sounds delish! I often add quinoa when I'm making rice. Excellent protein, right?

    Anyway, congrats on the weight loss!
